I’m a huge fan of Watermelon Feta Salad, it’s a perfect warm weather delight! With summer in full swing this is the perfect salad recipe to cool you down and keep you nourished. I’m actually not a huge watermelon fan, but I personally love this recipe so much. My friend Sheri McShane from WhenTheKidsGoToBed.com shared this recipe with me and it’s incredible!
Watermelon Feta Salad
I love any kind of salad that can be made in mere minutes! I’m all about making sure I’m doing everything I can to stay eating healthy this summer, too. I love how this Watermelon Feta Salad gives you the healthy and hearty dish, but it’s also such a quick make. I know so many people out there looking for quick lunch options and this is it for YOU! This is even a great snack meal at night, too.
The best way to describe this recipe is sweet and salty, 2 tastes that I personally love! I love a good sweet taste, followed by a little saltiness. It just works beautifully for this Watermelon Feta Salad. All the ingredients marry together and really do create such a yummy salad. It’s also a pretty dish, too! If you’re looking for a salad to make for your guests coming over, this is one that will surely pop out because it just looks so good!
Watermelon Feta Salad Ingredients:
3 cups cubed seedless watermelon (try to make all the cubes around the same size)
1/2 cup feta (make sure it’s a good one)
3 tbsp of chopped mint or basil (try to get fresh)
juice of 1 lime
1/4 cup olive oil
salt and pepper (use as much as you prefer, suggestion – quick sprinkle)
How to make Watermelon Feta Salad
Are you ready to see how easy this recipe is to toss together? It literally is just like tossing together a few ingredients and going off! You can make this while you’re watching the morning news or while you’re chatting with the kids while they’re in the kitchen! I made this salad last week and my Victoria loved helping me put everything together. She’s a BIG watermelon fan, so she was all over this!
3 Steps for the Salad:
- Whisk together olive oil, lime juice, and salt & pepper.
- In large bowl toss together watermelon, feta, and herbs.
- Coat with dressing and chill for 30 minutes before serving.
optional: drizzle with balsamic vinegar
