I can’t believe that Memorial Day weekend, the unofficial start of summer, has come and gone. It seems like just yesterday that I was complaining about the snow and dreaming about the sun…
I’m a total warm-weather girl. To me, summer means trips to the beach, bike rides in the park, sipping iced tea on the deck and delicious, summer-y salads.
May started off on the chilly side around here, but I’m sooo happy to say that it finally feels like summer has arrived! So it has been fun experimenting with salad recipes from ReadySetEat.com.
I have never been all that adventurous with my salads; the ones I make are typically very plain. But just as ReadySetEat has helped me come out of my cooking comfort zone with other dishes, so, too, has it helped me experiment a little more with salads – and the results are fabulous!
Brian and I both loved the Orange-Spinach Salad with Chicken. I made it on one of the first days that it actually felt like summer, and it was a perfect lunch salad for the occasion! It was flavorful, satisfying and so simple to make.
The Easy Mediterranean Salad was actually beyond easy to make. It’s nice when “easy” is in the name of the recipe, and it’s really true! This salad was light but filling… something I could toss together on a whim and be perfectly happy to eat.
The Simple Taco Salad was a bit on the heavier side, but you kind of know that going in. It is meat and beans and cheese, after all. This salad marked the first time I took taco ingredients and made a salad with them. It was really quite tasty, and Brian and I found that eating tacos with a fork is much less messy than the traditional way of eating them!
Since summer has just begun, I’m really looking forward to trying the many other delicious salad recipes that ReadySetEat has to offer. Good thing I know they’re easy to make, so I won’t be spending all my time in the kitchen… I want to spend as much time enjoying the weather as I do enjoying my salads!
