One thing I love about summer is getting together with friends. It seems like every weekend we get a chance to hang outdoors with friends and share laughs and good food. A lot of times they are just spur of the moment get-togethers and I need to whip up something quick to bring over. I never want to show up somewhere empty handed, and sometimes there just isn’t time to make a pasta or potato salad.
Black Bean Salad Recipe
One of my go to entertaining dishes is a black bean salad. I just serve it up with some tortillas or you can even eat it alone or top it on chicken. It is delicious and literally takes all of five minutes to prepare, leaving you plenty of time to pack the pool bag.
Black Bean Salad Recipe Ingredients:
16 oz. can of black beans (rinsed)
2 cups of corn
1 large red peppers (diced)
1 shallot (diced)
The juice of 1 lime
2 tbsp. of olive oil
Salt & pepper
Black Bean Salad Recipe Directions:
I usually have frozen corn on hand so I heat that up in the microwave first. Be sure to drain it.
Rinse the black beans.
Combine the beans, corn, shallot, and red pepper.
Dice the avocado and squeeze half of the lime over it. Add to the mixture.
Squeeze remaining lime over the mixture and add the olive oil and season with salt and pepper.
Grab some tortilla chips or pitas and you’re ready to serve a colorful and delicious appetizer. This is one recipe you’re going to want to bookmark forever!!!
