Life Chocolate Flavored Cereal S’mores Bites

School has taken on a different look this year. My 4 sons are doing a hybrid model where they go 2 days one week, 3 days the next and so on. It’s become our new normal. My Victoria is in full day, but with a very different day. She does everything in her classroom, even lunch, too.

With all of these changes, I’ve been trying to give my kids something to look forward to every day at lunch while at school. My mom go-to’s have been writing them cute little notes in the morning and packing them a fun snack.

Since we’re big Life Chocolate Flavored Cereal fans, I was so excited to see that you could take these delicious chocolatey squares and create S’Mores Bites. I found this yummy NO BAKE (um, hello!!) recipe on the Quaker Oats website and bookmarked it immediately.

I’m a fan of Life Cereal because each tasty square is made with whole grain goodness, with at least 24 grams of whole grains per one cup serving, so I feel good knowing that they’re eating something wholesome. They also have great flavor options like the newest Life Chocolate Flavored Cereal, which has easily become a favorite in my house.

If it tastes good and makes me happy too – it’s a win-win!

All you need to make these Life Chocolate Flavored Cereal S’Mores Bites is (4) ingredients:

2 cups Quaker Life Chocolate Cereal
1 1/2 tbsp unsalted butter
2 cups miniature marshmallows
1 tsp vanilla extract

I’m telling you right now, once you have all of these items laid out on your kitchen counter the smells will play with your senses! Between the tastes of chocolate and vanilla, and the real marshmallows, it was heavenly!

The great thing about these S’Mores Bites is that anyone can really make them. I’m obsessed that they’re a no-bake option. I love to bake, but I’m no expert. I used to feel bad that I wasn’t this amazing baker, but I know I’m in the majority here. Whenever I see easy, no bake options I’m all over them.

I’ve been making them because they’re great for lunch time treat, but my teen sons think these are super easy to make. I love knowing that it’s a recipe that is doable for the family (not just me!).

Are you ready for how easy this is?

Simply place your butter in large microwave-safe bowl.

Microwave on HIGH 30 seconds or until melted.

Slowly stir in your marshmallows and then microwave for 1 minute.

Stir it up and then continue microwaving, about 30 seconds, until completely melted.

Stir in vanilla. Add Life Chocolate Flavored cereal; stir to mix well and completely coat cereal.

Drop cereal mixture by 2-tablespoon (1/8-cup) measure onto waxed paper or baking sheet sprayed with nonstick spray.

Press to flatten slightly. Cool completely. Store covered at room temperature up to one week.

One thing that we’ve been doing is popping them in the fridge so they’re chilled. My kids LOVE them like this. The best part for me is that I can add these right into their lunches for a fun treat. It’s easy for me to pull together and they love to eat!
