We’ve been using our grill almost every single night for the past 3 weeks. Even though it’s not officially warm here in Rhode Island, it is officially spring and we’re embracing the season. One of our family staples is our Grilled Chicken Fajitas Recipe that my husband has perfected! There’s something so much tastier and delicious when you grill your chicken on the grill for fajitas.
Grilled Chicken Fajitas Recipe
Usually in the winter we make our chicken fajitas on the stovetop. It’s an easy meal to make and I love being able to have meals that the kids can eat in waves. Since we’re so busy during the winter months with swimming and wrestling, we don’t always have the opportunity to eat together as a family. I love that with fajitas we can make them early in the night and the kids can make them whenever they’re home to eat them.
Right now it’s different. We have nowhere to be and nowhere to go. I’m going to be honest with you, as much as the world is a scary place right now, the one silver lining is getting to be at home with my family so much. We never get time like this and I don’t know if we ever will again. I’m embracing it as much as can be.
With that all being said, we’re having Chicken Fajitas a little differently now – on the grill and TOGETHER. We fired up the grill last night and my husband put together his “world famous” Grilled Chicken Fajitas Recipe for the kids. My husband is an incredible cook, so when he find’s something he loves to make and is good at making – we deem him WORLD FAMOUS.
What’s his secret? Perdue Chicken.
The ONE product you absolutely, positively need to make these grilled chicken fajitas is Perdue Boneless Skinless Chicken Breast Filets. This is a must have for our meal because I feel good feeding my family this meat.
Why? Easy because it’s what I know about the chicken:

- Individually Wrapped
- No Thawing Necessary
It’s the best kind of chicken to feed your family because it’s good for them. I love the protein they’re getting, but I also love that I know that Perdue cares about their chickens. As you know I visited Perdue Farms this past September and got to meet chicken farmers and talk to the Perdue team (read my post – What I Learned from Perdue Farms). The passion and love and care that goes into raising these chickens is incredible.
Let me get back to this easy family recipe for you!
This is what you need for this recipe (and make sure you keep in mind that I’m cooking for 7… and my sons are big boys, so really I “pretend” I’m feeding 10!).
Ingredients for us:
(2) Packs of Perdue Farms Boneless Breast
(6) Peppers (we buy multi pack of yellow, green and red)
(1) Large Onion
(3) Packs of Fajitas Mix
(1) Bag 8oz. Shredded Mexican Cheese
(1) 20 pack of Soft Shells
(1) Pack Lettuce
(1) Backyard Food Company Salsa
#1 Take your chicken and peppers and onion (slice them up) and grill them up. As you can see – we’ve sliced our peppers and onion up and we’ve also used our grilling pan to place them in. We don’t have any cross contamination of them. We make sure to grill the chicken to 165 degrees F so it’s safe for eating.
PS – The smell of this wafting through the air is phenomenal!
#2– Once the chicken is done on the grill, add them to the basket pan with the peppers and onion.
#3 – Take your chicken breast and add into on a pan on the stovetop with the fajitas and follow the packet directions. When it’s all cooked and added together, it will look like this.
#4 Assemble your chicken fajitas with whatever you need and whatever you want! Use some cheese, tomatoes, lettuce and salsa!! This is pretty much on you and whatever you want to put on your fajitas! We’re a big fan of cheese and tomatoes, so we make sure these are always on hand!
