One of the beautiful things about fall is the apples – Healthy Baked Apples – Oatmeal-stuffed Baked Apples! My kids LOVE to go apple picking. It is a great way to spend time with family. While it is enjoyable, with three picking-happy little minions I then find myself with an abundance of apples. They each end up filling a bag…fast! I usually end up with $40 in apples sitting on my counter!
One super easy recipe I like to make is baked apples. I sometimes don’t have time to put together an apple pie, or peel apples for a nice apple crisp. Baked apples is so simple. I often have steel cut oats already cooked and on hand, but when I don’t I just stick with the little Quaker Oats packets. It makes it so simple!

Instructions for Healthy Baked Apples – Oatmeal-stuffed Baked Apples
First you need to hallow out the apples. Don’t pierce through the bottom. What I like to do is take my knife and make a cross cut through the core. I then just used a kids’ spoon and scoop out the core. I mix 4 tablespoons of water with the oat packets then spoon it into the apples. I top each one with a little bit of the butter and brown sugar. Bake for 25 minutes!
It is so easy. When using the oatmeal packets you don’t need to season! You have all the cinnamon and nutmeg goodness you need. Such an easy dessert! Don’t forget the a la mode!
Make sure you try this delicious Healthy Baked Apples! You will be so glad you did!!
