Banana Scones – Breakfast Treat

Banana Scones – are such a fabulous breakfast treat. I’m a HUGE banana fan and scones are such a great treat for breakfast. These are so amazing. Banana Scones

We’ve all been there; standing in the kitchen, looking at those nasty brown bananas sitting on the counter. Pretty gross looking. That was me this weekend. Normally I would make some banana bread or two-ingredient banana pancake, http://momgenerations.com/2014/07/easy-2-ingredient-pancakes/ but I wanted something different. I decided I would try making some banana nut scones. I had recently made some pumpkin scones, which the kids LOVED, so I figured I would swap out the pumpkin for banana and cross my fingers. Banana Scones are just a delish treat for all!

I was a little nervous about them. I really wasn’t sure how they would turn out. Well, I got full approval from the crew. They all loved them and asked for more. Honestly, I had to hide them. I had to put them in Tupperware and hide them behind the oats and rice in my pantry. They would have devoured the entire dozen.

Banana Scones

Ingredients for Banana Scones:

2 ¼ cups flour
1/3 cup sugar
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
6 tablespoons butter (cold)
½ cup mashed banana
2 tablespoons milk
1 egg
Chopped walnuts (optional)

Steps for Banana Scones:

Pre-heat the oven to 425° and line a baking sheet with parchment paper.

Combine the dry ingredients (not the walnuts) and then cut in the butter until you have what resembles a crumble. In a separate bowl combine the wet ingredients and whisk them together. Then fold the wet mixture in with the crumble and form dough.

Liberally flour your surface and roll the dough out to a half inch thick. If you want to use the walnuts, this is the time to press them into the dough. Cut into a dozen triangles and then bake them for 15 minutes. Seriously delicious! I’ve created little scone monsters in my house.
