Lunch is lunch. When it comes to the meals throughout the day, lunch isn’t the one that my kids love the most. I’m just being totally honest here with you! I’m always looking for some easy healthy lunch ideas, you know – ways to make lunch fun for them and also delish at the very same time. The one thing I always look forward to when school ends is no more packing lunches. It’s just this tedious task that I don’t enjoy one bit. I’m not the mom that makes beautiful mosaics out of fruit for their kids. I just don’t have the time or patience for it. With school starting here in a few weeks I’ve been putting together my lunch packing strategy for this year and I think I’ve got it figured out…although hiring someone to do it for me would be ideal.

I figured it all comes down to food prep; making everything easy and accessible. When I normally put together a lunch for my child they get a sandwich, wrap, or pizza strip along with a snack and a fruit. Well I’m going to share the job with them this year.

1. Prep your fruit. When you come home from the grocery get all your fruit cleaned. I soak mine in 1 part vinegar, 3 parts water mixture for 10 minutes. It gets all the dirt and wax off. Cut up the strawberries. Now it’s ready to go. “Pick your fruit guys.” Now, I’m not taking menu orders and washing and cutting up fruit every night.

2. Prep your snacks. Now buying individual wrapped snacks can be costly so I’m making my own. I rather get a bag of pretzels for $3 and divide it up into 12 bags instead of spending $5 on 6 individual small bags. I decide the size of the serving they’re getting. Popcorn, pretzels, veggies sticks, all divided up into individual bags and ready for my child to grab and put in their lunch box.

3. Don’t ask. I’m not asking what they want for lunch. They get what they get, and don’t get upset…a moto in our household. I know their likes and dislikes. Who likes turkey, who likes ham? They get to pick their fruit and snack…the rest is up to me.

    Great tips! Buying single packs is definitely expensive over time unless you are a really savvy shopper who coupons and everything else. This will be my daughter’s first year of school & I am hoping lunch making/packing goes well.
