Pancakes are a staple in the McClelland household every weekend. My husband loves to make pancakes and then he freezes them so the kids can have them throughout the week, too! Simple Pancake Recipe
Happy summer everyone! Hope you’ve been enjoying the beach or the pool. I know I have. Which means I’m still trying steer clear of loading up on carbs. I wanted to share with you one of my go-to, protein packed, healthy breakfasts…the two ingredient pancake. Yes, I’m serious. There are literally only two ingredients, and one is not pancake mix.
Ingredients for Simple Pancake Recipe
What do you need?
A banana and an egg. That’s it. Pretty simple, right? You can dress it up with a dash of cinnamon or some walnuts, but it’s just a banana and an egg.
How to Make this Simple Pancake Recipe
These are super delicious and easy to whip up. Mix together one egg and one banana. It makes three small pancakes. For a larger batch, just use the one to one ratio.
That easy and simple.
It’s almost like it’s not real it’s so easy!
Now the consistency of the “batter” for this simple pancake recipe is a little different from your general pancake, and they won’t bubble when they’re ready to flip. Let the pancake set well on the first side. That means, leave it alone. Let it cook until it’s nearly cooked through, then flip. Done. It tastes just like banana bread. I like to top mine with some crushed walnuts. My kids prefer no nuts and just add syrup.
