I had sauce leftover from homemade pizza night and I needed to use it up. I honestly hadn’t been to the grocery store all week so I had limited resources. All I had for meat was chicken or mahi mahi. I decided to whip up a quick Easy Chicken Parmesan Recipe . Now my husband prefers the traditional fry that sucker in oil chicken cutlet, where I prefer the more healthy baking method. Over the years I’ve learned to compromise. I fry them only for a minute on each side, then bake them the rest of the time.

Ingredients for Easy Chicken Parmesan Recipe

4-6 boneless chicken breasts
2 tbsp olive oil (you may need to add more as you go)
2 eggs
2 cups whole wheat, seasoned bread crumbs
2-3 cups of sauce depending on your preference
1 cup shredded mozzarella and parmesan cheese

Step By Step Easy Chicken Parmesan Recipe

Pre-heat your oven to 400°
Heat up the olive oil in the skillet.
Dip the cutlets in the eggs, then whole wheat seasoned bread crumbs.
Fry each cutlet for one minute on each side then place them on paper towels or brown paper bag.
Coat the bottom of a casserole dish with half the sauce. Layer the partially cooked chicken cutlets. Add remaining sauce. Then top with cheese.
Bake for additional 15-20 minutes depending on the thickness of the cutlets.

This Easy Chicken Parmesan Recipe is  seriously delicious and full of flavor. You still get the crunchy bread crumb crust with the light taste of the olive oil, but they haven’t been sitting in that oil for too long. Served with a quick side salad and that’s dinner!
My boys love it! They call it “pizza chicken.” Now we just have to work on eating all of the salad.
