Beef Stew Recipe Slow Cooker

Take this past weekend, for example.  My 8-year old grandson, William, was swimming in a 2-day swim meet in Cape Cod, a bit more than an hour drive from my home; 8:00 am starts, and earlier if my husband and I wanted seats.  We wanted seats, which meant leaving our home before 6:30, both days.  That would be AM.

I also wanted to get in two 3-mile runs during the weekend.

And there was that little thing of the Sunday evening AFC Championship Game with our hometown boys, the New England Patriots.  (We’ll talk about that result later…)

I spent a few minutes Saturday evening gathering my ingredients and cubing my stew meat, slicing my carrots and celery and refrigerating these ingredients for the early (very early!) Sunday morning slow cooker toss-in…

When Sunday morning arrived in all its earliness, all I had to do was toss everything but the barley and a touch of sugar into my slow cooker, turn it to LOW and head out the door for a wonderful day with my daughter Audrey and her family at Williams’ swim meet…

For me, knowing that all of those veggies are simmering in that stew is such a comfort.  The ease of tossing in the Hunt’s Tomato Paste, and especially the Hunt’s Diced Tomatoes, is perfect.  I know that Hunt’s uses FlashSteam® – not chemicals – to peel its diced, whole, stewed, and crushed tomatoes. I love this, as a cook, a fitness enthusiast and a Mom and Grandma.

When back at home, not only was this waiting, but my home was filled with the aromas of good food…

I managed a nice, cold, crisp 3-mile run.

Then went about the hardly anything necessary to finish up dinner for my husband Barry, my daughter Jane and her husband and a dear family friend…

Whipped up a quick salad buffet…
