Roasted Chicken with Vegetables from Hunt’s Signature Recipe Collection

Roasted Chicken with Vegetables is one of my favorite recipes and now with Hunt’s – you will love it forever!  My husband Barry is a great cook with a wonderful flair for good food.  He learned most everything about good cookin’ from his Mom, Flo, 100% Portuguese and 100% at home in her domain – her kitchen. Flo lived to almost 90, cooking meals right ’til the end, and sharing recipes, tips and great authentic Portuguese and Italian food (we live right outside Providence, RI – home of the best Italian food/restaurants in the USA!) with family and friends.  It’s what Flo loved.I watched. I listened. And I learned from Flo, too… because her son deserved the best home cooking at our home, too!  Don’t get me wrong.  I made mistakes; like the time as a newlywed I made Portuguese Boatman’s Stew with baccala (salt cod), but didn’t soak the baccala long enough.  Or the time I followed Flo’s meatball recipe, but made it with ground turkey instead of ground beef.  NO!

Barry and I also spent a couple of weeks in Portugal a few years ago, totally immersed in the culture of its food. I’ve spent the last few decades looking for “Mediterranean” recipes that Barry loves, but recipes that fit into our active lifestyle with our kids, grandkids, extended family and friends.  I want to DO what everyone else is doing AND cook Flo-worthy food!

Well, when I saw the Hunt’s Chicken with Mediterranean Vegetables recipe in the Hunt’s Signature Recipe Collection, I was all over it like anchovies on pizza.  I felt it resembled Roasted Chicken with Vegetables and I knew it would be a win for my family, especially Barry! And even on a very, very busy day with my own Mom, taking lovely Rita on a list of chores, I still had time to come home and create the most amazing meal for Barry, a dining-room worthy meal, complete with those aromas that make someone say, “WOW! What’s cooking?” as he walks in the door.

Roasted Chicken with Vegetables – Quick and Easy

 Roasted Chicken with Vegetables

Olive oil. Boneless, skinless chicken breasts. Garlic salt. Black Pepper. Chopped zucchini and/or yellow squash – we like both. Yellow onion.  And one can Hunt’s Diced Tomatoes with Rosemary & Oregano.

I love that Hunt’s uses Flashsteam Freshness – no chemicals – to give us fresh harvested tomatoes at their peek of freshness while saving us lots of time in the kitchen, too.  I also love that the Chicken with Mediterranean Vegetables recipe is right on the Hunt’s can. Genius.

The recipe is as easy as a Mediterranean breeze…

 Roasted Chicken with Vegetables

Chicken breasts, sprinkled with garlic salt and pepper, browning in skillet – both sides – in olive oil.

Chicken set aside while zucchini/yellow squash/onions cook in skillet – 5 minutes.

Stir in undrained tomatoes.

Return chicken to skillet, reduce heat and simmer, covered, 10-12 minutes…

Then I made a salad, set my dining room table with (as Flo would say) “my good China”, and listened for the door to open and Barry saying, “WOW! What’s cooking?”

    I love how easy you make it all look! And how naturally gluten free this recipe already is. I whipped up my own sauce last night with a can of Hunts tomato sauce and leftover shredded zucchini from a meatloaf earlier in the week. So yummy!
