From Quince it came?

What to do with Quince?

Quince Trees, with the fruit ripening before my eyes… in our back yard.

Its loveliness draws us in.

I’ve read that Quince may very well precede the famous Apple, and Biblical references as such may actually refer to the Quince.  The Romans and Greeks revered Quince and used them in rituals, particularly ones concerned with love.

I’ve also read that Quince are perfect for marmalades, jellies and preserves, and add liveliness to apple sauces and pies…

But does anyone have a favorite Quince recipe to pass along?

I’d love to experiment in my kitchen with the mighty Quince that’s bursting out all over in our little Quince Orchard in our back yard!
