Roasted Fingerling Potatoes

Well November is here and it’s time to start planning your Thanksgiving menu. Aside from the turkey and cranberry I like to add a good selection of sides. I just had to share my herb roasted fingerling potatoes with you. Not just because they are delicious, but they are so beautiful and add some gorgeous color to your table. Oh, and they’re super simple.

Roasted Fingerling Potatoes

Ingredients Roasted Fingerling Potatoes

1 lb fingerling potatoes (white, red, and purple)
3 tbsp olive oil
1 tbsp chopped fresh rosemary
1 tbsp fresh thyme
Coarse salt
Black pepper

Steps for Roasted Fingerling Potatoes

– Preheat your oven to 425°
– Make sure you scrub your potatoes first, because we’re leaving the skins on.
– Dice your potatoes to about 1 inch. Try to keep them all uniform so that they cook the same.
– Place the potatoes in a bowl and pour on the olive oil. Make sure they’re all coated. Add in your herbs. Make sure you finely chop that rosemary. You’re guests don’t want to chew on pine needles.
– Spread your potatoes on a large cooking sheet and add some coarse salt and pepper. Bake them for a half hour.

Roasted Fingerling Potatoes is one of the most yummy recipes ever! This is a great one to have on hand for bigger dinners or if you’re hosting a fantastic Thanksgiving or Christmas meal. I will say this – I make this year round for my kids. It’s THAT easy to make and it’s THAT good, too!
