Homemade Chicken Noodle Soup Recipe

They say that “chicken soup is good for the soul.” I completely agree. I received some sad news from a friend this weekend. She lost her sister to a horrible accident. I stood there in my kitchen devastated for her loss. I, myself, needed a little comforting. Chicken soup. Yes, I believe chicken soup is good for the soul. It hugs you from the inside. It is the quintessential comfort food. Sick or sad, it’s the perfect pick-me-up.

This chicken soup recipe doesn’t require slaving over the stove all day. It’s done in under an hour with simple ingredients.

Ingredients Homemade Chicken Noodle Soup Recipe:

1 lb. of chopped chicken tenders or chicken breast

2 tbsp olive oil

1 medium yellow onion

3 carrots

3 celery stalks

2 bay leaves

6 cups low sodium chicken stock

1 cup water

Salt & Pepper

2 tbsp chopped FRESH dill

1 cup uncooked orzos

Homemade Chicken Noodle Soup Recipe Steps:

I personally like to cook the orzos first because if I put them in the soup they suck up all of the broth, and I like the broth! While that’s going, I start on my vegetables. In a large pan, start to heat up the olive oil. Chop and drop all your veggies. Rustic or fine chopping, whatever you prefer. Add the bay leaves to flavor the veggies and some salt and pepper as well.

Once the veggies have cooked for about 10 minutes and the onions are translucent add the chicken stock and water. Bring to a boil. Once the soup is to a boil add the chicken. Let the soup boil for a couple of minutes and then reduce the heat to a simmer. Add the cooked orzos and let simmer. If you want more broth add another cup of water. Stir in the fresh dill. The dill is really what makes this soup in my opinion.
