Stuffed Portabella Mushroom Recipe

It’s a new year!!! And with so many people being carb conscious I figured I would share one of my carb free dinners with you. You can call it a “stuffed portabella” or a “portabella pizza,” whatever you fancy. I’ll just tell you, they’re delicious! I use to make English muffin pizzas all of the time when I was a kid. I love that you can add anything on top that you want. Veggies, meats, or just plain cheese. Sauce or no sauce. This is sort of the same, but using large portabellas instead o f English muffins.

Ingredients for Stuffed Portabella Mushroom Recipe:

Olive oil
Large portabella mushroom caps – this is key! You want to make sure they’re large!
Salt & pepper
Toppings (whatever you wish)
I used: kalamata olives, spinach, yellow bell pepper, red onion, grape tomatoes, and blue cheese crumbles

Stuffed Portabella Mushroom Recipe STEPS:

First, preheat your oven to 400°

Scrape out the stem and gills out of your large portabella caps. Then coat the caps with olive oil and some salt and pepper. Make sure you coat enough!!

Bake the mushroom caps on a baking sheet lined with tin foil for 5 minutes. They tend to let out a lot of juice. You don’t want them to be filled with extra juice!

Take the caps out of the oven and load them up with your toppings. Bake again for 15 minutes. And you’re DONE!!! The BEST EVER!! I’m telling you!!!!
